3 eggs
1/2 tsp. Baking Powder
1 cup oil
2 tsp. Baking Soda
2 cups sugar
3 tsp. cinnamon
2 cups raw, coarsley grated zucchini
2 tsp. vanilla
2 cups flour
1 cup chopped nuts (optional)


Preheat oven to 350 degrees. Heavily grease and flour 2 (5 x 9) bread pans.

In mixer, combine eggs, sugar, and oil. Beat well. Stir in zucchini.

Blend in dry ingredients. Stir by hand until all are well blended. Add vanilla and nuts if desired.

Pour evenly into greased and floured bread pans.

Bake on center rack in oven for 1 hour. When done, take a knife and run around edges of bread; then cool 15 to 20 minutes BEFORE removing from the pan.

Occasionally my bread will stick to the bottom of the pans, I just use a large spatula to assist in the removal. Let cool top-side up on a wire rack. Delicious and freezes especially well. A great way to get your kids to eat zucchini... (well, it doesn't hurt to be a bit sneaky now and then!)
